1 14.5oz box Barilla Protein Penne Pasta

16 oz Mushrooms

-

1 Tbsp Olive Oil

1 Tsp Minced Garlic

2 Tbsp Fresh Parsley

1 Tsp Salt

½ Tsp Ground Black Pepper

2 16oz Blocks Firm Tofu

1 10oz container Hummus

Directions

1.

Cook pasta according to dirctions on box.

2.

When pasta is done, set aside 2 cups of pasta water.

3.

Slice mushrooms into 1/8th inch thick slices.

4.

Heat olive oil in pan, and add mushrooms on medium heat.

5.

Cook mushrooms until they shrink, turn brown and there is hardly any liquid left. ~15 min.

6.

Add garlic and parsley, cook for one more minute.

7.

Add hummus and 1 cup of pasta water, stirring slowly to mix well.

8.

Simmer on low heat, until thick (~5min).

9.

Stir in pasta, so all of pasta is well coated. Add more pasta water if you need to thin out sauce.
