1 14.5oz box Barilla Protein Penne Pasta-
16 oz Mushrooms-
1 Tbsp Olive Oil-
1 Tsp Minced Garlic-
2 Tbsp Fresh Parsley-
1 Tsp Salt-
½ Tsp Ground Black Pepper-
2 16oz Blocks Firm Tofu-
1 10oz container Hummus1.
Cook pasta according to dirctions on box.2.
When pasta is done, set aside 2 cups of pasta water.3.
Slice mushrooms into 1/8th inch thick slices.4.
Heat olive oil in pan, and add mushrooms on medium heat.5.
Cook mushrooms until they shrink, turn brown and there is hardly any liquid left. ~15 min.6.
Add garlic and parsley, cook for one more minute.7.
Add hummus and 1 cup of pasta water, stirring slowly to mix well.8.
Simmer on low heat, until thick (~5min).9.
Stir in pasta, so all of pasta is well coated. Add more pasta water if you need to thin out sauce.10.
