To Taste Salt & Pepper-
½ Medium Red Onion-
¼ Cup Chopped Hazelnuts1.
Preheat oven to 400 degrees.2.
Cook lentils in vegetable broth, according to package directions.3.
Peal and dice sweet potato into 1/4 inch cubes.4.
Heat a bit of olive oil in pan on medium heat, and saute the garlic and onion (~3 min).5.
Once lentils are cooked, add them, harissa, chickpeas, and diced tomatoes to pan. Cook ~7 min.6.
Prepare baking dish by spraying with preferred oil.7.
Dish a layer of lentil mixture into level layer in baking dish.8.
Add a layer of sweet potatoes.9.
Repeat layering until mixture and potatoes are gone.10.
Top by evenly spreading hazelnuts on mixture.11.
Cover with aluminum foil, and bake for 20 minutes.
