Directions

1.

Preheat oven to 400 degrees.

2.

Cook lentils in vegetable broth, according to package directions.

3.

Peal and dice sweet potato into 1/4 inch cubes.

4.

Heat a bit of olive oil in pan on medium heat, and saute the garlic and onion (~3 min).

5.

Once lentils are cooked, add them, harissa, chickpeas, and diced tomatoes to pan. Cook ~7 min.

6.

Prepare baking dish by spraying with preferred oil.

7.

Dish a layer of lentil mixture into level layer in baking dish.

8.

Add a layer of sweet potatoes.

9.

Repeat layering until mixture and potatoes are gone.

10.

Top by evenly spreading hazelnuts on mixture.

11.

Cover with aluminum foil, and bake for 20 minutes.
